Ce sont des thés semi-oxydés, à mi-chemin entre les thés verts (qui ne sont pas du tout oxydés) et les thés noirs (qui sont totalement oxydés). ls dégagent un parfum extraordinaire de noisette grillée. Baptisé wu long, qui signifie « Dragon noir » en chinois, ou oolong pour les occidentaux.
